Ingredients for Making Chicken Stroganoff

  • 2 chicken breast (boneless), cubed into large pieces
  • 1 tsp garlic powder
  • 1 tsp red chilli powder
  • salt to taste
  • 2 tbsp + 2tbsp maida
  • 2 tbsp+tbsp butter
  • 1 small onion, finely chopped
  • 3-4 cloves of garlic, finely chopped
  • 200gm mushrooms, finely sliced
  • 1 chicken stock cube dissolved in 1 cup warm water
  • 2 tsp mustard paste/sauce
  • 1/4th cup cream or 4tbsp cream

Method for Making Chicken Stroganoff

  1. Marinate the chicken with salt, red chilli powder and garlic powder. Toss in 2tbsp maida till all the pieces are coated and dry. You can use more maida if required.
  2. Heat 2 tbsp butter in a pan, and add the chicken pieces. Turn the pieces once browned on the bottom side, and carefully turn to brown on all sides. Remove to a bowl.
  3. In the same pan, add 2 tbsp butter and add the onion and garlic. Fry until softened, do not brown. Add 2 tbsp maida and stir for a few seconds.
  4. Add the sliced mushrooms, mustard sauce and cook for a few minutes
  5. Add the chicken stock and deglaze the pan, scraping off all the bits from the bottom of the pan.
  6. Return the chicken to the pan and let it cook.
  7. Add the cream, and adjust the thickness of the gravy according to your liking, and adjust salt.
  8. Serve hot alongside herbed rice and sauteed vegetables.
