Chicken Nuggets

Before you begin

  • While a food processor is ideal and easy to use, a mixer grinder also works well.
  • To make breadcrumbs at home, grind 5-6 slices of slightly stale bread in the food processor, dry roast it on a pan and use to coat the nuggets

Ingredients for Making Chicken Nuggets

  • 1kg boneless chicken breast, washed, dried and chopped into large chunks
  • 4 tsp onion powder
  • 4 tsp garlic powder
  • 3 tsp salt
  • 1 tsp pepper powder
  • 1 or 2 tsp red chilli flakes (as per your spice preference)
  • Breadcrumbs as required
  • 1 cup atta or maida

Method for Making Chicken Nuggets

  1. In a food processor jar, add the chicken, onion powder, garlic powder, salt and pepper. Grind till it reaches a smooth paste.
  2. Next add the red chilli flakes and pulse just once.
  3. Remove this mixture to a clean zip bag, flatten it out evenly to 1/2 inch thickness.
  4. Lay it flat on a tray and keep it in the freezer until frozen solid.
  5. Remove it from the freezer, and cut it into shapes as per your liking. I find it easier to cut into squares.
  6. Make a slurry of atta/maida and water, thick enough to form a light coating over the nuggets.
  7. First dip each nugget into the slurry, and then into the breadcrumbs, coating it from all sides. Transfer it to the same tray and keep it back in the freezer.
  8. Once frozen solid, transfer it to a clean zip bag or an airtight container, and store it in the freezer. This stays fresh for more than 2 months.
  9. To use, heat oil in a frying pan, and shallow fry the nuggets on low flame. This takes slightly longer to cook than the store bought nuggets, as these contain 100% chicken, and its also raw. So it needs time to thaw thoroughly, and then cook properly.
  10. Ensure that they brown from both sides for maximum crunch.
