
Ingredients for Making Spinach Corn Quesadillas
- 1 bunch spinach, blanched, drained and chopped
- 1 cup corn, boiled
- 1/2 cup milk
- 1/2 cup water
- 2 tbsp maida
- Half cooked rotis
- salt
- pepper
- herbs
- Grated cheese
Method for Making Spinach Corn Quesadillas
- With the flame turned off, whisk together the milk, water and maida. Turn the flame on and let it cook until thick. Turn off the flame.
- Add the spinach, corn, salt, pepper and herbs.
- Once the mixture is completely cooled, add the grated cheese.
- Layer this mixture thickly on one side of a half cooked roti.
- Heat a few drops of oil on a pan, arrange the quesadillas. Cook them on both sides until brown and crunchy.
- Serve with ketchup
Note: Make the rotis slightly thicker than usual. Also prick them with a fork before roasting, so that they do not fluff up.
