Ingredients for Making Spinach Corn Quesadillas

  • 1 bunch spinach, blanched, drained and chopped
  • 1 cup corn, boiled
  • 1/2 cup milk
  • 1/2 cup water
  • 2 tbsp maida
  • Half cooked rotis
  • salt
  • pepper
  • herbs
  • Grated cheese

Method for Making Spinach Corn Quesadillas

  1. With the flame turned off, whisk together the milk, water and maida. Turn the flame on and let it cook until thick. Turn off the flame.
  2. Add the spinach, corn, salt, pepper and herbs.
  3. Once the mixture is completely cooled, add the grated cheese.
  4. Layer this mixture thickly on one side of a half cooked roti.
  5. Heat a few drops of oil on a pan, arrange the quesadillas. Cook them on both sides until brown and crunchy.
  6. Serve with ketchup

Note: Make the rotis slightly thicker than usual. Also prick them with a fork before roasting, so that they do not fluff up.
