
Ingredients for Making Veggie Loaded Pizza Sauce
- 1 onion, roughly diced
- 3 cloves of garlic, peeled
- 2 tomatoes
- any vegetables you would like to use (carrot, beetroot, pumpkin)
- mixed herbs
- 1 kashmiri red chilli for colour
- salt and sugar to taste
- 1 tsp oil
Method for Making Veggie Loaded Pizza Sauce
- Heat oil in a pan, fry onion and garlic until soft. Add tomatoes, your choice of vegetables and 1 kashmiri red chilli for colour. You can skip this if you are using beetroot. I use small pieces of leftover vegetables lying in the fridge for this.
- Add water and cook until the vegetables are soft. Leave it to cool down.
- Once cooled, transfer to a blender jar and blend until smooth.
- Remove to a bowl, add herbs, salt and sugar, mix.
- Use as required on a pizza or as pasta sauce.
- You can freeze this and use as required.
