Ingredients for Making Green Chilli Sauce
- 200gm light green chillies, stems removed and washed and roughly chopped
- 15-18 cloves of garlic, peeled
- 1 large onion, peeled and diced roughly
- 6 tbsp vinegar
- 2 tbsp sugar
- salt to taste
Method for Making Green Chilli Sauce
- In an open vessel, add green chillies, garlic and onion. Add enough water to cover, and bring to a boil. Let it boil for 5 minutes before turning it off and let it cool down.
- Once the mixture has cooled down, grind it to a fine paste, leaving no lumps.
- Take this paste in an open vessel, add salt, sugar and vinegar. Bring this to a boil and cook it down till it reduces and reaches a thick consistency.
- Let it cool down, and store it in an airtight container in the fridge. This will last for more than a month.
Note: You can halve this recipe for a smaller batch of chilli sauce if you don’t use it regularly.
