Thai Chilli-Basil Chicken

Ingredients for Making Thai Chilli-Basil Chicken

  • 250gm minced chicken
  • 1 bunch basil leaves, sorted, washed and roughly torn
  • 5-6 cloves of garlic, finely chopped
  • 2-3 spicy green/red chillies, slit
  • 2 tsp dark soya sauce
  • 2 tbsp oyster sauce
  • 1 tsp cornflour mixed in 1/4th cup water
  • 1 tbsp oil
  • salt to taste

Method for Making Thai Chilli-Basil Chicken

  1. Heat oil in a wok on a large flame. Add chopped garlic and stir fry till the raw smell goes.
  2. Add the minced chicken and stir fry, breaking the pieces as you go to avoid large lumps of meat.
  3. Add the soya sauce, oyster sauce, chillies, basil leaves and stir fry on a high flame.
  4. Mix the cornflour in water and add this mixture to the wok. This will give a good thickness to the dish. Add more water if you would like a thinner consistency.
  5. Adjust salt, and serve alongside hot steamed rice.
