Ingredients for Crispy Dosa Batter

  • 1 cup urad dal (whole or split)
  • 3 cups rice (any variety)
  • 1 teaspoon methi (fenugreek) seeds
  • A handful of chana dal
  • Salt to taste
  • ½ teaspoon sugar (optional)

How to Make the Batter

  1. Wash and soak the urad dal, rice, chana dal and methi for 4-5 hours
  2. Grind to a fine batter. Make sure it is not too thick. Add as much water as is required at this stage. Add salt and let it ferment overnight.
  3. For Fermenting, keep it in a warm place. If it is cold outside, wrap it in a blanket and keep inside the oven (turned off).
  4. Even if the batter rises an inch or so, it is more than enough. It need not double in volume and overflow from the vessel. More often than not, that would mean that the batter is over fermented and it will give you sour dosas.
  5. The best dosas are made with batter that is set. I like to keep the fermented batter in the fridge for a few hours and then make the dosas.
  6. Add some sugar for the slight sweetish tinge.
  7. Do not mix the batter too much. That will disturb the air that had formed during fermentation.

How to Make Crispy Dosas

  1. Heat a dosa tawa well.
  2. Sprinkle a little water on the hot tawa and wipe it clean.
  3. Pour a ladle of batter in the centre.
  4. Spread it into a thin circle using gentle circular motions.
  5. Drizzle a little oil or ghee around the edges if desired.
  6. Cover and cook on one side only.
  7. Once the bottom turns golden brown and crisp, fold and serve immediately.

Frequently Asked Questions

Can I use any type of rice?

Yes. Most regular rice varieties work well for everyday crispy dosas. However, Idli rice/dosa rice works best.

Why isn’t my batter fermenting?

Cold temperatures slow fermentation. Keep the batter in a warm place or wrap the container in a blanket overnight.

Why are my dosas soft instead of crispy?

The batter may be too thick, the tawa may not be hot enough, or the batter may not have fermented properly.

Can I make the batter in advance?

Yes. Once fermented, refrigerate it and use it within 3–4 days.

Storage

Store fermented batter in an airtight container in the refrigerator. Stir gently before each use.
