Before you begin
- Prep required: boil the sweet potato
- Equipment required: wide large mixing bowl, rolling pin, deep frying vessel

Ingredients for Making Jowar- Sweet Potato Puris
- 1 cup jowar atta
- 1 cup wheat atta
- 2 tbsp rava (semolina/sooji)
- 1 small sweet potato, boiled and peeled
- Handful of coriander leaves, chopped
- small piece of ginger
- 1 green chilli
- 1/2 tsp red chilli powder
- 1/4 tsp haldi powder
- 1 tsp dhania jeera powder
- 1 tbsp sesame seeds
- salt to taste
- oil to deep fry
Method for Making Jowar- Sweet Potato Puris
- Pound the ginger and green chilli together in a mortar and pestle to a coarse paste.
- Add this paste to a wide mixing bowl and mash in the sweet potato.
- Add in all the ingredients except oil, and knead to a firm hard dough adding water as required.
- Rest the dough for 15 minutes.
- Roll out into puris and deep fry.
My favourite alternative to rolling puris is to roll out a large plate sized thick paratha, cut into 4 triangles and fry. This reduces the rolling effort to a bare minimum.
