Jowar- Sweet Potato Puris

Before you begin

  • Prep required: boil the sweet potato
  • Equipment required: wide large mixing bowl, rolling pin, deep frying vessel
  • serves: 2-3

Ingredients for Making Jowar- Sweet Potato Puris

  • 1 cup jowar atta
  • 1 cup wheat atta
  • 2 tbsp rava (semolina/sooji)
  • 1 small sweet potato, boiled and peeled
  • Handful of coriander leaves, chopped
  • small piece of ginger
  • 1 green chilli
  • 1/2 tsp red chilli powder
  • 1/4 tsp haldi powder
  • 1 tsp dhania jeera powder
  • 1 tbsp sesame seeds
  • salt to taste
  • oil to deep fry

Method for Making Jowar- Sweet Potato Puris

  1. Pound the ginger and green chilli together in a mortar and pestle to a coarse paste.
  2. Add this paste to a wide mixing bowl and mash in the sweet potato.
  3. Add in all the ingredients except oil, and knead to a firm hard dough adding water as required.
  4. Rest the dough for 15 minutes.
  5. Roll out into puris and deep fry.
    My favourite alternative to rolling puris is to roll out a large plate sized thick paratha, cut into 4 triangles and fry. This reduces the rolling effort to a bare minimum.
