  • Besan (gram flour)
  • Rice flour, 1 spoon
  • Red chilli powder
  • Turmeric powder
  • Dhaniya jeera powder
  • Garlic, grated and soaked in water
  • Salt, to taste
  • Oil, for frying
  • Water, as required
  • Oil, 1 spoon, for the dough

How to Make Garlic Sev

1. Prepare the garlic

Grate the garlic and soak it in water. This helps incorporate the garlic into the dough while distributing its flavour throughout the sev.

2. Make the sev dough

Add besan, rice flour, red chilli powder, turmeric powder, dhaniya jeera powder and salt to a mixing bowl.

Add the soaked garlic along with the garlic-infused water and one spoon of oil.

Add enough water and mix everything together to form a hard dough.

3. Fill the sev maker

Take a chakli maker and fit it with the sev attachment.

Fill the maker with the prepared dough.

4. Fry the sev

Heat oil for deep frying.

Press the dough through the sev attachment directly into the hot oil, working in small batches.

Fry until the sev stops bubbling and becomes crisp.

Avoid overcrowding the pan, as this can affect how evenly the sev cooks.

5. Cool and break

Remove the fried sev and place it on a plate to cool.

Once cooled, break it into smaller pieces.
